Zvi Katz founded the family’s business in the 1950's. As a primary breeder, he then established his own gene pool by collecting various bird types, including those that existed in the region for hundreds of years. Their existence is well documented in the traditional literature. In 1978 Josef Katz, son of Zvi, joined the company as a second generation of breeders. Since 2000 Josef, has been leading the breeding program. In 2007, a first member of the third Generation, Zvika katz, has joined the company.

Mishkei Katz & Co. was the breeding stock supplier for the first integrated poultry company in Israel. This integrated company, based on Katz's breeding know-how and his poultry lines, grew within several years to encompass one third of all the poultry production and marketing in Israel.

In 1978, Josef Katz joined the company and Kabir Chick Ltd. was established.
